Make It Tonight: Pan Roasted Chicken Over Cauliflower Puree From ‘Top Chef’ Star Betty Fraser

As a contestant on the second season of Bravo’s “Top Chef,” Betty Fraser became an instant fan favorite. Her high energy, constant smile and impressive creations helped to raise her profile as master of “California comfort food,” which she has been serving from her award-winning Hollywood eatery, Grub, for almost 12 years.

Fraser describes her food as a creative balance of “healthy versus decadent,” and serves what she calls, “comfort food but with a little bit of an upscale twist.” This includes buttermilk-marinated chicken baked with a layer of crispy potato chips, white truffle burger and a variety of dishes based on her addictive “crack bacon.” “We do really playful things,” she says of the menu.

Wondering what to make for dinner tonight? Fraser is busy gearing up for the Sun WineFest this weekend, but shared a new recipe for an impressive, healthy meal that is light on labor time and perfect for a weeknight dinner.

PAN ROASTED CHICKEN OVER BASIL CAULIFLOWER PUREE

Preheat oven to 400 and put a pot with salted water on to boil for cauliflower.

In a heavy bottom oven proof sauté pan with about 1 T olive oil (cast iron is great!), get the pan pretty hot and gently place seasoned chicken breast, skin down; leave it until it releases (watch the sides for a nice golden color).

Turn chicken over and place the pan in the oven for about 15 minutes (test if juices run clear, no pink—you know the drill).

Remove chicken breasts and return the pan to burner over medium heat, deglaze the pan with about 1 cup white wine and reduce about two minutes, add about 2 T butter, salt, pepper and finish with a squeeze of fresh lemon.

While chicken is in the oven, place 4 cups cubed cauliflower into pot of boiling water for 15 minutes, drain, puree with 10 large basil leaves, zest of one lemon, 2 - 3 T butter, salt and pepper.

Place pureed cauliflower in the center of the plate, top with one chicken breast and pour pan sauce over.—enjoy! (seriously 2 pans, 20 minutes, delish!)
